The sujihiki knife is a long, thin and narrow (dual bevel) slicing knife, quite light and nimble given it's length.
Traditionally used as the home cook version of a yanagiba knife for sashimi preparation, they work well for any number of slicing duties including meat and vegetables. Many chefs are using shorter sujihiki as their primary knife during service, they are a great all round utility knife for professionals or the home cook.
The blade is forged from powder coated high-performance Damascus steel and is made from a VG-10 steel core with 34 layers of steel on each side. The distinctive wavy pattern is formed as the blade is ground and beaded from spine to sharpened edge, hand sharpened to a 16-degree cutting angle.
Seki Mae stainless steel has a higher percentage of carbon for greater strength and durability. This alloy combines many other metals, such as chromium, cobalt, vanadium, molybdenum and tungsten, to further improve wear resistance, corrosion resistance and strength. The blades on Seki Mae Classic Blonde knives are stronger, more durable and stay sharper longer.
The PakkaWood blond handle is made of genuine hardwood and resin. The addition of resin makes the wood moisture resistant, strong and durable. The shape of the handle is designed to fit comfortably in your hand.
